The first commercial Bag-In-Box was invented by William R. Scholle in 1955 for battery acid. Scholle are still the leading bag-in-box manufacturer to this day. However, the product range is considerably more diverse, as are the end uses. For use, the customer tears open a pre-cut window at one end of the box and connects a nozzle to a built-in port on the bag to pump out its contents. The BIB has many common commercial applications. The most ubiquitous uses of BIBs are for wine and to supply syrup to soft drink fountains, and bulk supplied condiments such as ketchup or mustard, in the foodservice context. BIB is also used to dispense sulfuric acid for filling lead-acid batteries in garages and dealerships. The user is generally advised to not take the bag out of the box, as the bag alone may not be able to contain the internal pressure from its contents and could rupture. After the contents are exhausted, the entire box and bag inside is typically discarded rather than refilled.
The wine cask (or boxed wine) was invented by Tom Angove of Angove's, a winemaker from Renmark, South Australia, and patented by the company on April 20, 1965. Polyethelene bladders of 1 gallon (4.5 litres) were put into cardboard boxes for sale to consumers. The original design required that the consumer cut the corner off the bladder inside the box, pour out the desired quantity of wine and then reseal it with a special peg.
In 1967 C. H. Malpas and Penfolds Wines patented a plastic, air-tight tap welded into a metallised bladder, making storage much more convenient for consumers. All modern wine casks now utilise some sort of plastic tap, which is exposed by tearing away a perforated panel on the box. The chief advantage to bag-in-a-box packaging is that it prevents oxidation of the wine during dispensing. After opening, wine in a bottle is oxidized by air in the bottle which has displaced the wine poured. wine in a bag is not touched by air and thus not subject to oxidation until it is dispensed. Cask wine is not subject to cork taint or spoilage due to slow consumption after opening. However, the bag is not hermetically sealed and has an unopened shelf life shorter than bottled wine. Most casks will have a best-before date stamped.
As a result, it is not intended for cellaring and should be drunk within the prescribed period. Bag in a box packaging is also preferred by producers of more economical wines because it is less expensive than glass bottles. Unlike bag-in-box packaging of other liquids, wine is not under pressure so it is perfectly safe to remove the bladder from the box. A bag of wine, once removed from the box, will float on water. this allows quick cooling of a white wine by immersion in an ice bath.

It is an offense to take home a bottle from a restaurant. The restaurant might even loose it's license if it allows it. Equally, it is an offense to allow diners to bring their own bottles. Etc, etc. However, a few years ago when they made the drinking and driving laws stricter in France (also in Europe) many restaurants lost business. people went out to dine less and when they did they had less wine. There was several attempts to promote "take home your unfinished bottle" by wine regions and restaurants by giving diners nice looking carry-home bags for free at the restaurants. But things have actually improved in the last few year--you can take that half bottle home from the restaurant now (it has to be specially bagged up), and you can have wine shipped to you from out of state retailers (hallelujah). But, of course, there are plenty of silly regulations left, including those that tagged Marketview--which happens to be one of my local stores. (And a very good one, with a very conscientious owner.) Endorsed by Missouri Restaurant Association SB262/HB450 allows the removal of partially consumed bottles of wine if (i) the restaurant securely reseals the bottles, (ii) places them in a one time use, tamper-proof, transparent bag and securely seals the bag and, (iii) provides a dated receipt for the meal. MONTANA The Liquor Control Commission tells us that a person may take an alcoholic beverage away from the licensed premises providing the license allows the sale of alcohol for on or off-premises consumption. Endorsed by Ohio Restaurant Association Senate Bill 131, signed by the Governor allows the remove of partially consumed bottles of wine if the bottle is securely resealed by an employee of the permit holder in such a manner that it is visibly apparent if the bottle has been subsequently opened or tampered with. OKLAHOMA OK law us. (6) allows patrons to remove partially consumed bottles of wine if they are purchased with a meal and re-corked by the restaurant. (see note 2) OREGON Looks like section us. and us. allows the holder of a full or limited on-premises sales license to allow a patron to remove a partially consumed bottle of wine if (i) the wine is served in conjunction with a meal, (ii) the patron is not a minor and (iii) the patron is not visibly intoxicated. We also hear that the restaurant must advise the patron of open container laws although we currently cannot find that in the actual written law. (see note 2) PENNSYLVANIA - The use of a Wine Doggy Bag is recommended Act 59 of 2003 allows a patron, in conjunction with a meal, to remove the unfinished portion of the bottle of wine from a hotel or restaurant. CANADA The Alcohol and Gaming Commission of Ontario - Information Bulletin No. 009 allows patrons who, brought their own bottle of wine to a licensed establishment, to remove it as long as it has been resealed by the licensed establishment.
Note 1 - While these states allow open containers of alcohol to be transported in a motor vehicle, there is no specific law we can find allowing restaurants to permit patrons to remove unfinished bottles of wine. Making, following, and monitoring rules costs time and energy, some of which is inefficiently spent. In 2006, Illinois passed a law allowing diners to take a half-full bottle of wine home from a restaurant. Now, in order to save $23 million in federal highway money, state legislators must take time away from some of the states most pressing issues to make a small revision that the wine must be carried in the trunk. The state law amended the Illinois open-container law, allowing diners to carry resealed bottles home in a special tamper-proof, one-use-only bag. The amendment passed by wide margins in the Illinois House and Senate and took effect last year.
However, (a U. S. Department of Transportation) letter says, the law failed to specify that the bottle has to be carried in the trunk or in the rear of the vehicle, in order to meet federal requirements. Illinois has 30 days to issue a rebuttal and show why its law does comply with federal requirements. The letter puts the state on notice that another 3% must be transferred next year unless the law is changed.
In yet stranger Illinois legislative news, we have now passed a bill that will make it illegal to purchase a case of wine directly from an out-of-state vintner, as of June 1. Thereby, I will be forced to pay the obscene Chicago sales tax to buy all of my wine locally. my favorite small winery in NY will no longer get my business because they do not have a local distributorAND all of the Illinois beverage distributors stand to gain handsomely, as they will now be in the middle of every wine purchase in the state. This is special interest-created legislation at its worst.
I wanted to share my current encounter with this Illinois open container law. It does not pertain to wine, rather two empty beer bottles. While vacationing in Panama City Beach Florida, I found two empty discarded beer bottles in a parking lot. Me, being the outdoors nut, save the planet green guy, and the one that hates throwing anything out the window, picked them up to properly dispose of them in a garbage can. I placed both of them behind my drivers seat of my two door vehicle. After returning home a week later, my vehicle was in an automobile crash with a drunk driver that didnt recieve any fines due to his father being on the county board. My car went in for repairs and finally fixed one month later. I forgot all about the beer bottles at this point. I got pulled over by an Illinois State police officer for not having a front license plate (the bracket was still on order from the body shop!). He asked if he could search my vehicle, I said no, I have somewhere I need to be, I dont have time to have my vehicle searched. I was asked to exit my vehicle, so I did so. He didnt search my car or touch anything, but got down on his hands and knees with a flashlight, leaned into my vehicle by the drivers floorboard and saw the bottles. I pursuaded to tell him the TRUTH. For some reason he didnt believe me. I even asked to do the breathilizer to show that I hadnt been drinking. He refused to let me do that. I was given a ticket for illegal transportation of alcohol. Several things that irritate me are me picking up the bottles. I should have just left them. Me getting hit by the drunk driver, and him NOT getting charged. The big-headed police officer that was persistant that my story was a lie. The fact that everybody in my town drinks and drives, and truck beds are full of empty bottles and empty cans that are thrown in the back when theyre consumed. Ive recently learned that is 100% legal due to the fact that theyre not accessible by the driver, nor the passenger. So, in conslusion, a word to the wise, If you are a nice citizen like me who cares about Illinois, along with all of the other states like Florida, and you see empty beer bottles from partiers. Please pick them up and dispose of them properly, however, make sure you place them in the trunk of your car first.

I would check with your state's Liquor Authority on that one. But here's some info. YORK – A WINEDOGGYBAG STATE – Approved by State Liquor AuthoritySLA 588 allows the removal of one partially consumed bottle of wine if (i) the restaurant has the appropriate wine or liquor license, (ii) the bottle of wine is purchased in connection with a full course meal, (iii) the patron consumes a portion of the wine with the meal, (iv) the wine is securely resealed, placed in a one-time-use tamper-proof transparent bag which is securely sealed and, (v) a dated receipt for the full course meal and wine is provided to the patron. However, in some additional Googling, I found this article from 2004. down at the above link, it says. However, just because it's legal to doggie-bag that Chianti, doesn't mean every restaurant automatically allows it. It's usually voluntary for the restaurant to participate, and some opt out amid concerns they could be liable if a driver toting wine home had a drinking-related accident. In addition, in some states, the rules vary by city or county. To avoid misunderstandings at the end of the meal, consumers should ask a restaurant about its policy before ordering. Some states, including Texas, Connecticut, North Carolina and Utah, require restaurants to offer the doggie-bag option. But even some of these laws don't explicitly say that restaurants will be punished if they don't allow it. So - in NY State, perhaps it's legal for the restaurant not to allow you to take it with you. And scroll down a bit further, and this very restaurant is quoted as not allowing patrons to take the unfinished wine home! On a visit to Locanda Vini and Olli, an Italian restaurant in Brooklyn on Sept. 10 - one day after the New York state doggie-bag law took effect - the restaurant told a group of diners they couldn't take home wine leftovers. Catherine de Zagon, a co-owner, says that her attorney advised her not to let customers take out wine until October since the police might not be aware of the change in law. She adds that, since New York law doesn't require restaurants to allow doggie-bags for wine, she may continue to forbid them.
It can't be gotten into in transit if it's in the trunk, well, at least under normal circumstances. My cousin (in NY) threw a bridal shower a few years ago and was told she couldn't take out the opened wine bottles from the 15 or so tables, even though she had paid for them. We packed 'em in the trunk and took our chances.
But how is the restaurant supposed to ensure that the person puts it in the trunk? That's how the law is (poorly) written. As for you cousin taking 15 bottles- the law says one will be allowed. it would seem that if you had 15 part bottles still open, you ordered way too much.
Here in TX you can buy drive thru daquiris. All they do is put a piece of tape across straw hole that can't be removed (sure) and hand you a straw. I suppose the same might done here for wine. Sorry to be a little off topic.
The law got changed in Florida about a year or so ago and we are now allowed to take leftover wine home with the cork back in.
As others have said, laws vary by jurisdiction, but the logic behind changing the laws to allow diners to take their unfinished wine home is to reduce the incidence of people driving over the limit because they felt obligated to finish their wine when dining out. If I were in their shoes I'd consider that I'd be less responsible for you illegally drinking your leftover wine while driving home that I would be for overserving if you decided to rapidly consume the balance of your wine because I refused to let you take it home (not that I'm suggesting you'd do either of these things).
Maryland is decided by juristiction(county).The restaurant re-corks, places the bottle in a bag, adds a staple or two. This is also done in catering sample/taste situations. You own the wine. Both you and the restaurant own a piece of the DUI. BUT, if they will gladly pour, even over pour, some common sense needs to prevail. I NEVER LEAVE WINE, doesn't say we drank it. I will pour it out, my perogative. You may not be surprised how often policy gets flexible where the law permits when you insist on a sink or ? for disposal.

Great change of pace with this show. I might have to check out the Moulin since it sounds like Brickhouses Gamay that I really like, but really havent liked much of the normal Beaujolais. Yes I also recognized the Dave Batista figurine. It was very good to see a Beaujolais Cru get some publicity. Sounds like a truly excellent wine. If I am not mistaken, Gewurztraminer means spicy grape. Although for spiritual reasons I do not eat shellfish, I have read that this kind of wine goes very well with raw oysters, a good substitute for muscadet or fino sherry. That wine looked delicious too. QOTD to Gary. What wines do you drink purely for pleasure, guilt-free? And, are you planning any visits with videotaping to the Alsace region?

Excellent! Times three!!! Among Lucien Albrechts very good entry level wines is the outstanding Methode Champenoise, Cremant dAlsace Brut Rose, also under $20. Several sites state that the St. James Little Basket Press is 100% Grenache, a portion of which is purchased fruit from Rousillion, and some of that, which is carbonically macerated. In order to have 50% proportion of a cuvee from the current vintage, it follows that that volume (x number of barrels, or half of the cuvee production) must be fermented seperately from the solera wines, then blended with an equal volume from the solera. Remainders may then be added to the solera for the next vintage. This wine sounds cost conscious in production methods employed, as well as deliciously juicy. Reminds me of the Vin dAvril from Paul Avril

Gary, my question for you is quite important. Ive been watching your show for almost a year now, and in a month Ill be turning 21. My parents want to get me two bottles of a 1987 wine for my birthday. I watch the show, they do not. What direction should I steer them in? I liked the format because I think it would be fascinating to taste all of those wines from all over the world. Moulin A Vent is SICK! I travel to France 2 or 3 times a year. Mostly west of Paris. I have a colleague in Chartres that loves the stuff and we usually find a wine with 10+ years of age that is pure magic. QOTD - How do you balance a good professional life, a good family life, and a fanaticism for sports? I love sports myself, but I lost my fanaticism years ago because life is short and getting upset over a sports team loss seemed pointless.

I must admit that I am guilty of not leaving comments very often but these wines will bring me out every time. I was drinking a Babcock pinot when I sat down to watch, but I put the cork back in it, and went down and pulled out a Brouilly I happened to buy last weekend. No comparison. Brilliant episode, the format was awesome. I am not sure I could flip from wine to wine and still have the insight that Gary did - maybe one day. Interesting factoids on the Gewurztraminer - 20 percent of all grapes planted in the Alsace? I wonder what started the trend? I have never heard the term Rhone filed blend nor the concept of the solarum style - pretty cool. I have never had anything but Beaujolais Nouveau so the last pick is a must-try for me - the real Gamay comment has me intrigued. QOTD. When all this is said and done and you walk away from the wine world, what is the one thing you want to be remembered for? Any thoughts of a legacy, or do you take this day by day? QOTD - for you - I have often thought about getting into the wine business, but have some concerns. I wouldnt want to go into corporate wine brand management or regional sales/distribution. I also would want to stay in the greater NYC area. What would you recommend about this?
My question for your QOTD is actually twofold. 1 - What was the first wine you ever tasted? 2 - I think everyone who tastes wine has an a-ha moment, where they get it. The moment where they first taste those nuances without being told about them, where they can detect all the inherent elements in the aromatics, etc. When was your a-ha moment? I know youve talked about your origins before, but Im not sure Ive ever heard you talk about this part of your origins.

This is a great idea, or it was when the beer company did it. It would have been nice to see some more thought going into the Warwick version, as opposed to simply copying the idea. That is a common thread with many South African wineries - more of the same when it comes to branding and promotion. Warwick has been an exception to this in the past, with some innovative ideas, which probably gave them the 'bottle' to try this. However in saying that one would think that they would have looked to put their own spin on it.

Unlike our gift and wine bag pattern, these bags do NOT require a buttonhole or casing for the ribbon. The bag is stitched together and hemmed. Then, just attach the ribbon to the outside of the bag (sewn in one place on the back of the bag). Tie the ribbon around the bag. That's it! You can add your own trimmings and create your own look. Well, I wasn't about to go announcing this anytime soon, but as some recent blog posts have spilled the beans, I should probably make it official. I will be serving as a speaker and moderator for the next Symposium for Professional Wine Writers, which will take place at the Meadowood Resort in Napa Valley on February 20th - 23rd, 2007. I will be joining Karen McNeil and Jerry Shriver as moderators for the three day event, and will be joining a group of extremely distinguished speakers the likes of Eric Asimov, Dan Berger, Michael Bauer, Anthony Dias Blue, Elin McCoy, and more. Needless to say, I was honored to be asked to participate in this event as something more than a participant. I certainly enjoyed myself last year, and learned a lot about many aspects of the wine writing profession that a blogger would never encounter. Tom Wark and several others have made much of my inclusion as a speaker on a list of names made up of some of the top wine writers in the country. I want to avoid all comparison with these folks, who are much more accomplished as writers and much more knowledgeable about wine than I. I do think that Tom and others have latched on to the correct significance of my inclusion. Blogs are now a major force in wine writing no matter how you look at it, and I'm certainly someone who can talk about where they've been and where they are going. Some of the more interesting conversations at the Symposium last year had to do with the changing nature of the craft and the future of wine writing. My selection as moderator and some initial session planning indicates that these topics will be more front-and-center in this year's Symposium. I look forward to bringing my perspectives and experience as a blogger to bear on the discussion, as well as the more professional understanding of Internet trends that my day job requires. I'd like to encourage anyone who is serious about wine writing to attend. Attendance is open to "published editorial wine writers, wine/food writers, wine/travel writers, and editors." It's not clear whether just having a blog qualifies you, but having a high quality one might. I'll be blogging from the Symposium again this year so those who prefer to observe from their armchairs can do so with ease.
I don't want to become the David Foster Wallace of wine bloggers, but I really do want to footnote this whole idea of cats and bags. Where in the heck did this expression come from? Was there a time and place when cats were frequently kept in bags, so that somehow the escape of one could come to be known as a common mistake? And while we're on the subject of cat expressions, why would there ever be one way to skin a cat, let alone multiple ones? Even if this expression never meant to refer to the domesticated variety, why on Earth would it matter that there were multiple ways of separating a dead tiger from its fur? It's mysteries like these that keep me awake at night sometimes.

Whomever wrote the blurb about what "letting the cat out of the bag" means has obviously never owned a cat. I see it as a natural thing. cat's go into bags and hang out, groom themselves, etc. The bag seems to represent something primal in cats and perhaps metaphorically in us. Therefore letting the cat out is to deny it of its wicked bag inhabiting ways. Also, congrats Alder, how can I get invited. I'm an unpaid freelance wine writer us.

LIVERMORE, Calif. -- The mass-produced Almaden and Inglenook wines will switch from the familiar three- and four-liter glass jugs to lightweight Bag-in-Box (BIB) packaging. The Wine Group said Wednesday that swapping the glass jugs for BIB packaging would reduce the brands’ carbon footprint by 60 percent and avoid some 11 million pounds of packaging waste. The company bills itself as “the world’s most cost and carbon efficient vintner” for its use of BIB packaging, which it claims has less than half the carbon footprint of bottled wine in terms of energy needed for glass production and transportation. “The positive impact to the environment from making the shift to BIB packages will be huge, simply because the volume of these two brands combined account for 10 million cases of production, David Kent, The Wine Group’s CEO, said in a statement. The company, which recently launched a marketing campaign extolling the environmental benefits of BIB packaging, said switching all bottled wine sold in the U. S. to BIB packaging would save about 941 million tons of glass packaging annually. Glass, however, can be recycled endlessly but is much heavier and expensive to transport. The Wine Group already produces the boxed wine Franzia, as well as other budget wines such as Concannon, Glen Ellen and Big House. It bought Almaden and Inglenook from Constellation Wines in February, and is now the second largest wine producer by volume.

Supersize has arrived in the Washington wine industry. More big bottles and bag-in-the-box offerings are popping up on store shelves. Generally, the 1.5-liter bottles and the bag-in-the-box are lower-end, but the quality still is high. And more premium wines are coming out in the double-size bottles. Why? The wine industry, including competitors from California, Italy and Australia, are flooding the market with such products. Washington, if it hopes to grow its market share at home and outside the state, must keep up. And there is the wow factor when a host opens a magnum of, say, Pepperbridge Cabernet Sauvignon or an award-winning Barnard Griffin cab. Heck, folks around my summer barbecues say wow when I open a big bottle of $10 Stimson Lane Merlot to go with the burgers. Probably the best-known Washington 1.5-liter bottling is Stimson Lane, a branch of Chateau Ste. Michelle Estates launched in 2002. You can find Stimson Cabernet Sauvignon, Merlot and Chardonnay in stores for as little as $9 to $11 a bottle. Now sister winery Columbia Crest is offering a lineup of its own with not only Cabernet Sauvignon, Merlot and Chardonnay, but Syrah and its popular Merlot/Cabernet blend as well. A visit last week to a Tri-City supermarket that specializes in wine showed about one-third of the shelf space was taken by large-format bottles, mainly from California. And Washington was making a show on the shelves. Alas, the Washington bag-in-the-box wines, which usually come in the three-liter size, the equivalent of four bottles, are hard to find and generally only readily available from the few wineries that offer them. Most established Washington wineries make 1.5-liter and larger-bottle wines, but you generally have to go to the winery or order them online. Lynda Eller, communications manager for Ste. Michelle, said since offering the large bottles in 2002, the Stimson Lane label has created a loyal following for its 170,000 cases a year.People use these large bottles for a backyard barbecue with friends, because they like the quality and the price, Eller said. Marie Eve Gilla, winemaker at Forgeron in Walla Walla, who makes a 1.5-liter bottle of Merlot, said her wine often is purchased as a gift or by restaurants that pour it by the glass. Coke Roth, whose family has been in the wine business for a half-century, said large bottles age better than the traditional regular bottles because there is more wine to handle the aging factors, which mostly come from constant contact with the cork. I would check with your state's Liquor Authority on that one. But here's some info. YORK – A WINEDOGGYBAG STATE – Approved by State Liquor AuthoritySLA 588 allows the removal of one partially consumed bottle of wine if (i) the restaurant has the appropriate wine or liquor license, (ii) the bottle of wine is purchased in connection with a full course meal, (iii) the patron consumes a portion of the wine with the meal, (iv) the wine is securely resealed, placed in a one-time-use tamper-proof transparent bag which is securely sealed and, (v) a dated receipt for the full course meal and wine is provided to the patron. However, in some additional Googling, I found this article from 2004. down at the above link, it says. However, just because it's legal to doggie-bag that Chianti, doesn't mean every restaurant automatically allows it. It's usually voluntary for the restaurant to participate, and some opt out amid concerns they could be liable if a driver toting wine home had a drinking-related accident. In addition, in some states, the rules vary by city or county. To avoid misunderstandings at the end of the meal, consumers should ask a restaurant about its policy before ordering. It can't be gotten into in transit if it's in the trunk, well, at least under normal circumstances. My cousin (in NY) threw a bridal shower a few years ago and was told she couldn't take out the opened wine bottles from the 15 or so tables, even though she had paid for them. We packed 'em in the trunk and took our chances.
But how is the restaurant supposed to ensure that the person puts it in the trunk? That's how the law is (poorly) written. As for you cousin taking 15 bottles- the law says one will be allowed. it would seem that if you had 15 part bottles still open, you ordered way too much.
Here in TX you can buy drive thru daquiris. All they do is put a piece of tape across straw hole that can't be removed (sure) and hand you a straw. I suppose the same might done here for wine. Sorry to be a little off topic.
The law got changed in Florida about a year or so ago and we are now allowed to take leftover wine home with the cork back in.
As others have said, laws vary by jurisdiction, but the logic behind changing the laws to allow diners to take their unfinished wine home is to reduce the incidence of people driving over the limit because they felt obligated to finish their wine when dining out. If I were in their shoes I'd consider that I'd be less responsible for you illegally drinking your leftover wine while driving home that I would be for overserving if you decided to rapidly consume the balance of your wine because I refused to let you take it home (not that I'm suggesting you'd do either of these things).
Maryland is decided by juristiction(county).The restaurant re-corks, places the bottle in a bag, adds a staple or two. This is also done in catering sample/taste situations. You own the wine. Both you and the restaurant own a piece of the DUI. BUT, if they will gladly pour, even over pour, some common sense needs to prevail. I NEVER LEAVE WINE, doesn't say we drank it. I will pour it out, my perogative. You may not be surprised how often policy gets flexible where the law permits when you insist on a sink or ? for disposal.

At a winery south of Melbourne, something strange is afoot. This merlot looks very good, it's still very, very wet on the cap, hasn't started rising into the chimney yet, whereas this one here has. And then if you look at the cabernet, the cabernet's going berserk. That's rising above the chimney. I suppose that's the mysteries of it all," Andrew Hickinbotham said. Indeed, fermenting grapes into wine is an ancient human pursuit, replete with romance, synonymous with alcoholic pleasure. And yes, shrouded in mystery. Are these polythene pipes, gurgling as crimson as a severed artery, the future face of wine making? The Hickinbotham family hope so and many others genuinely think so. It has wine purists making their own gurgling noises. God forbid, no traditional oak barrels are used. Not even the more economical stainless steel vat. Instead, a three-layered polymer bag that's permeable to oxygen. But the results are startling. The fermenter bag is producing a red wine measurably redder and softer on the palate than conventional methods. Being a red wine the fermentation occurs with the skins because that's where the colour is. The skins have to be in contact with the fermenting juice because the alcohol is what extracts the colour from the skins. It's done manually in many wineries in Australia, but by using the bags we can actually hold the skins in contact with that juice. These plastic bags optimise the contact of the grape skins to the juice below, maximising flavour and colour, Andrew said. It still requires further developmental work, but its potential is breathtaking. "Inside this chimney there's another tube that goes down inside this cap. We don't know the best size for that inner tube for fermenting tube to pass up, there's just so many combinations, permutations, Andrew said. The fermenter bag can be warmed or chilled using water. It's totally portable, for example wine could be fermented in transit, and it offers enormous labour savings for smaller wineries. In theory anyone can now make wine in their own backyard.We estimate that the cost of production is about seven per cent of what conventional winemaking costs. I think they worked it out to be about 17 cents a litre versus the cost of a barrel is about $1,300 per barrel, which is equivalent to about $6 per litre of wine, so there is obviously a very big cost-saving, Terryn Hickinbotham said. The fermenter bag has just been launched on the world market."We've had incredibly good response with the bag, we've done trials in California, Chila, South Africa and Portugal and since the inception of the red fermenter bag last year, we've now brought in a whole family of bags, we've got a white wine fermentation bag, a wine maturation bag and a storage bag," Andrew said. There's a few people more qualified to make that observation. If the road to hell to is paved with good intentions, then the inventors path is potted with pitfalls. So far Andrew Hickinbotham has had virtually no Federal Government assistance. "It's incredibly frustrating in that if we don't do something about it, Australias going to lose this technology, the Americans are hot on our heels doing a similar thing, we've got to now turnaround and protect our intellectual property. In one respect this story is eerily similar to one in 1986.Unfortunately my brother developed the cab mac and he took it to the stage where it became a joint venture with a French-based company and really the French-based company bought into that just really to shelve it, it was impacting so heavily on the French growers. And there was a problem with patent infringement on that cab mac? Oh yes, the French used it that year, we know that. And as a small family company with very limited resources we couldn't do anything about it, Ian Hickinbotham said. But worse was to come. They drink a remarkable new wine in memory of a remarkable young winemaker. It's a wake that's taken a year to organise. In the glasses, cab mac, the drink now a red style that Stephen Hickinbotham pioneered. But the young innovator didn't live to see his technique adopted worldwide as it now has been. A light aircraft clipped the hills behind Cairns in September last year and Stephen Hickinbotham was one of those killed. He was always on the go, always tinkering, always saying why? Why not, why can't we, why shouldn't we? A research trust in Stephens memory was set up by Sarah Goff and wine writer Mark Shield. Last night a wine auction was held to finance the trust. Many who attended, like Derryn Hinch, had donated rare and valuable lots from their own collections. At the time of course it was devastating to our family I think it was devastating to the Australian wine industry. Stephen was only 30 but already he was making quite an impression on the whole wine industry, Andrew Hickinbotham said.They all have that flair for thinking laterally and I think you only need to speak to Ian to see that his way of thinking about a problem takes a totally different track to most people's thought processes. He really does think laterally about most problems and Andrew has that same ability and Stephen had that as well, Terryn said. The fermenter bag was inspired by Stephens legacy. "It's something we've worked on since Stephens invention of the carbonic maceration system and it's just a natural progression on from there, Terryn Hickinbotham said. After Stephens death, the Hickinbothams relocated their winery from Geelong, starting from scratch on the Mornington peninsula, where the cooling influence of the southern ocean ideally suits pinot noir wine production now winning acclaim as amongst the world's best. The winery is built totally from re-cycled materials the vineyard is also run on environmentally friendly practices and a flourishing tourist trade passes their cellar door. Like Stephen, Andrew Hickinbotham studied wine making in France, continuing an illustrious family dynasty of winemakers. It began with his grandfather, Old Hick, an analytical chemist who started the wine course at Roseworthy College South Australia, the alma mater of Australias elite winemakers. His son Ian, now an international wine writer and critic, pioneered the now world famous Coonawarra region of South Australia, introduced fruit wines to the Australian palate in the 1960's and achieved industry renown as a winemaker and innovator. But few realise his pivotal role in developing the table cask, the so-called 'bag in the box". Ian and a man named Malpas from a plastics company jointly developed 17 prototype airtight cask taps. This is a fallacy, we did not invent the bag in the box, it was used in Europe even for vinegar for at least 20 years before we did, Ian Hickinbotham said. But Ian Hickinbotham vision perfected the technology. He did a lot of the early work on the cask but at the time he was working for Penfold's and as such the intellectual property was that of Penfolds. Unfortunately Penfold's didn't grab the horse by the reins and run with it. But Wynns did and the rest is history. Wynn's made an enormous amount of money from the bag in the box, Andrew said. Worldwide, the cask made wine accessible and affordable to a new mass market. Until a decade ago cask wines still accounted for 70 per cent of Australian wines sales. I don't think you can ever take away the romance of an oak barrel and it certainly adds its own character, we still do oak fermentation of our chardonnay to give it particular characters that we're looking for but the aromatic varieties, we grow taminga, sauvignon blanc, anything you can ferment in a stainless steel tank, you can easily ferment in a fermenter bag and get the same sort of characters, Andrew said.People still think of the romance of the barrel and the big musty caves where they store all the wine, putting something in plastic, they lose that romance and I think that's one of the big problems with the fermenter bag technology, there's no great romance in it, but it's just a great invention that works and it takes a lot of labour out of the whole winemaking process.

And its a microcosm of the dysfunction that has rotted this state for years. The owner of one of western New Yorks largest wine and liquor stores may be fined $10,000 by the New York State Liquor Authority because he had the audacity to sell wine gift bags to his customers who were buying, you know,
Heres the short version. The law is written to enumerate the various things that a wine or liquor store is permitted to sell. Like most stores, Marketview Liquor in Henrietta, NY sells wine, wine glasses, wine stoppers, and corkscrews. Thats all just fine. But because the law does not specifically say that such stores can sell wine gift bags, the sale of such decorative bags must be punished. It does not matter if the law inconveniences customers who had hoped to do their holiday wine shopping in one location -- they can go to the grocery store if they want a gift bag. Whats the reason for this? I spoke to several NY state senators today who told me that the law was written long before stores were selling gift bags. Now, according to Senator Joe Robach (R-Rochester), the SLA is getting too aggressive in going after the vicious offenders of the gift bag rule. Robach would like to see the Authority issue warnings while reconsidering the laws merits or, as the case may be, demerits. But several state lawmakers asked me not to use their name when they explained that they believethis whole thing is about liquor stores vs. grocery stores. They said that lawmakers knew they had upset grocery stores by preventing wine sales on their premises, so they disallowed the sale of some wine accessories in liquor stores (wine-themed magnets is another. Seriously.) The bottom line is, well, the bottom line. no one seemed to think the SLA would enforce these rules, but the state needs cash. And heres what burns Mike Palmeri, who owns Marketview Liquor. According to documents he showed me today, the SLA sent inspectors in to his store back in June. Mike had no idea (and also says he had no idea he was not permitted to sell wine gift bags). But instead of informing Mike that he was being investigated, they kept the case quiet, allowing Palmeri to place an order of $25,000 worth of gift bags, most of which he expected to sell around Christmas. The SLA whacked him the first week of December -- so hes out the fine and his inventory costs. I guess I should have known the law, he told me. I guess I should not have assumed I could sell these little gift bags for a buck or two apiece. Its my responsibility to know that. But now Im going to do everything I can to get this law changed. I asked Michael Smith of the SLA to help me understand why the law prohibits selling wine gift bags in wine stores, and he replied that its up to SLA to enforce the laws -- any other questions should go to the legislature. In other words, it might make not a shred of sense, but the state is coming after your store if you dare to sell pretty little wine gift bags. Just because a law is bad for customers and for business does not mean its bad for lawmakers.
