S you view my site, you need to know a few things about me. First, every knife or blade on my site was made by me, right here in Southern Oregon, in the USA. I believe in providing you with quality, whether a blade blank, a no frills working knife, or a work of edged art. There is no substitute for quality and I believe my work reflects that.
Ow for a little information about me. Ive been making knives for 15 years. I started with a kit knife, then went to blade blanks by Bob Engnath, then making my own knives.
Do both stock removal and forging, since I believe there is a place for both arts. I make my own damascus and mosaic damascus, although I also use damascus by Jim Ferguson and Devin Thomas. I make my own mokume. My blade blanks are a way to help the beginners, as I once was, or those who want to make a knife without buying a shop. It is also a way to give back something to those who taught me so much along the way.

The shade tree auto mechanic was a good ol' boy with a box full of old tools who rejuvenated beat up cars with a minimum of fuss. I'm trying to take the same approach to knife making. I'd like to tell you how to transform a piece of appropriately chosen scrap steel into an excellent cutting tool without using a lot of expensive power tools. Even if you never use this information to make your own knife, I hope that it will give you a greater awareness of what constitutes a good knife.
Staying Sharp The ability of a knife to maintain a sharp edge after extensive use is a very valuable characteristic. I grit my teeth when I read or hear Don't make the steel too hard because then it will be difficult to sharpen. What nonsense! Yes, there is a tradeoff between edge holding ability (hardness) and toughness but once you use a knife which stays sharp you will never want to use anything else. There are two principal mechanisms which cause a knife to become dull, mechanical abrasion and chemical etching. Mechanical abrasion is the main dulling mechanism in carving dry wood. Both mechanical abrasion and chemical etching are important in meat cutting and shaving. Stainless steel razor blades last longer than the old plain carbon steel ones because they are more resistant to attack by the chemicals in the shaving cream. Edge holding is also intimately connected with the hardness of the blade. Hardness, defined as resistance to penetration, is a measurable quantity. One qualitative measure of hardness is the Rockwell C scale, based on an instrument which presses a diamond stylus with a specific force into the material being tested. The size of the indentation indicates the hardness. Cheap knives and most stainless steel knives have a hardness value of RC 56 to 58. better knives, such as the laminated Swedish Mora blades have a hardness of Rc 58 to 60. Many Japanese woodworking tools have edges with hardness of RC 62 to 64. The difference between edge holding properties of Rc 56 and Rc 62 is ENORMOUS. I try to temper blades to Rc 62. Yes, the steel is more brittle than if it were softer but remember this is a knife, not a pry bar. One consequence of increased edge hardness is that it takes longer to sharpen. With blades of very hard steel you should avoid using 'Crock Stick' or other cylindrical sharpening devices. Excessive pressure on a cylindrical sharpening stone with break out a series of little tiny chips from the cutting edge. Use flat whetstones instead. Raw Materials Most of my experience has been with plain carbon steel, type 1095, .05 inch thick. The reasons for using 1095, in no particular order, are. a. That's what I have available from making Bowscraper blades. b. It is relatively inexpensive. c. It is easy to heat treat. d. It has excellent edge holding properties for wood carving. 1095 can be obtained from Precision Steel Warehouse ( ( us. ) or Admiral Steel ( Worn out files are another source of high carbon steel similar to 1095. 1095 steel consists predominantly of iron atoms with approximately 0.95 % carbon by weight. Since carbon atoms are lighter than iron atoms (ratio 12/56) 4.5 % of the atoms are carbon and 95.5 % are iron. Another way of looking at it. Every 23'd atom is carbon. An additional small amount of manganese is added to make the steel easier to harden. Another type of steel, readily available in old saw blades, is L6. Look for an old crosscut saw (misery whip) or Sawzall blades. This is a high carbon steel with some nickel added. The heat treatment procedure for L6 is similar to that for 1095. L6 is slightly less hard and more tough than 1095 for a given heat treating cycle. One can also buy knife steel from mail order houses that specialize in knife making supplies. The shade tree knife mechanic should avoid using high-speed steel saw blades or fancy alloys for knife construction. The procedure for heat treating high-speed steel and higher alloy knife steels is much more complicated, involving very high temperatures, exact temperature control and reducing atmospheres to protect the blade from oxidation. That isn't shade tree any more. Blade design The knives I make have fairly short blades. This is because of the experience I had with a laminated Mora knife with a 3 3/4 inch blade, a gift from my late mother in law. It had excellent edge holding properties but the parts of the blade that needed sharpening most frequently were the first 2 inches of the blade and the tip. The middle part of the blade never got dull. From this I concluded that I rarely used the middle portion of the blade so why not eliminate it? Make the blade no more than 3 inches long. I use a tapered tang that fits snugly into a slot in the handle. Cutting out the blade Wear safety glasses dammit! It seems to work best when I make the handle first. This is particularly important when making one-of-a- kind handles from antler. After finishing the handle, including the slot for the tang I make a cardboard template of the proposed blade shape to see how it looks in the handle. Next I use an indelible marking pen to transfer the blade shape to the steel. A vice to hold the steel and a hand-held hacksaw can be used to cut out the blade if the steel is in the soft annealed state. Now I use the power jigsaw with a high speed blade to cut the blade to shape. I use the highest speed setting on the saw and stop frequently to lubricate the blade with paraffin wax to keep it from overheating. Some touch-up work with a fine file is always needed to make the back of the blade nice and smooth.
Setup for filing the bevel Ergonomics! If you had infinite patience and dexterity you could hold the knife blank in one hand and the file in the other while you shaped the blade. That would probably be the last knife you ever made. Good ergonomics requires clamping the knife blank at waist height so that you can apply your body weight and muscle power to the file in order to make the bevel quickly, accurately and neatly. Use both hands and apply a very great pressure to the file. I also don't like getting steel filings all over my workbench. Consequently I fasten a 2by4 to the workbench which extends out about 12 inches. I then clamp the knife blade to the 2by4 and the filings fall onto the floor.
About steel and heat treating This is a description of the way I heat treat 1095 carbon steel knife blades. My personal objective is to make a small knife with exceptional edge-holding properties instead of something that can be used as a crowbar. Consequently the steel near the edge is kept in a very hard state. Light Weight Theory. Iron atoms have a simple crystal structure. When you add carbon atoms to an iron crystal lattice the equilibrium position for the carbon atoms is in big holes in the lattice. When the carbon atoms are in the big holes, the annealed state, the properties of the iron + carbon alloy (commonly called steel) is only slightly different from the properties with no carbon. You hardly know the carbon atoms are there at all. The magic happens when you heat the steel lattice above a critical temperature (medium red heat or about 1475 degrees Fahrenheit) and then cool it quickly. Then the carbon atoms get stuck in places where they normally wouldn't fit, a non-equilibrium condition. The crystal lattice expands slightly because the carbon atoms have pushed the iron atoms farther apart and becomes very, very much harder. The tensile strength and hardness are vastly increased. The down side of all this is that the steel becomes very brittle. A major for this reason is thermal stress. Unless every part of the steel goes through the exact same cooling cycle there will be parts of the steel where most of the carbon atoms are pushing the iron atoms apart and regions where a smaller fraction of the carbon atoms are distorting the iron lattice. This sets up severe mechanical stress in the steel which may cause it to spontaneously crack. As quenched the steel is probably harder and more brittle than you want. The hardened steel can be made less brittle and thermal stress relieved, tempered, by heating it to a specific temperature for a specific amount of time. Tempering is always a compromise between hardness and stress relief. Remember, no carbon = no hardening. You can't heat treat a nail. Heat sources I have used three different heat sources. The first was my Weber barbecue + charcoal briquettes. I did it in the late afternoon so I could see the medium red hot color in the steel. Light up a medium size pile of briquettes, fan them to get them glowing and plunge the steel into the mass. When the steel is medium red quench it. The advantages of the Weber are that you can do large pieces, there is very little danger of overheating the blade and it provides a reducing atmosphere so there is little chance of de-carburizing the blade. The next furnace I made, good only for small things like carving knives, was a muffle furnace heated by my Bernzomatic torch. Poke a hole in the bottom of a tin can which will accommodate the broad Bernzomatic burner head. Fill the tin can with damp dirt and then jam a 1 inch by 2 inch stick into it to provide the furnace cavity. Pull the stick out and let the dirt dry. Light the torch and play the flame through the hole. Wait until your furnace gets hot before you put in the blade. Simple but effective.
C. Temper the blade to get the desired hardness. in a kitchen oven at 400 deg F for about 20 minutes. The goal is Rockwell C-62. Warning. If you put the knife blade in your wife's oven without thoroughly washing the 30 weight motor oil off you will be in BIG trouble. Many books give a slightly different recipe for tempering carbon steel. The procedure they follow to temper a quenched and hardened blade is. 1. Polish the hardened blade with emery cloth so you see shiny metal. 2. Heat the blade slowly until you see a colored oxide form on the surface of the blade. When the color is just right plunge the blade into water. (light straw color for a knife to deep blue for a screw driver.) That's the way it was done by the village blacksmith. Welcome to the 20'th century. I don't think oxide colors are as accurate as a thermostatically controlled kitchen oven. Differential Tempering A differentially tempered blade has a cutting edge which is harder than the remainder of the blade. This is something I didn't do in the earliest knives I made. I do it now because it looks good but I don't know if the knife is stronger because of it. If you don't want differential tempering then skip steps c. and d. c. Polish the blade with emery cloth so it looks like shiny metal. This is so you can see the oxide colors form on the back as you heat it up the draw some of the temper on the back of the blade. d. Draw more temper from the back of the blade. Hold the blade in a clamp with the cutting edge in contact with a damp pad of paper towel or rag. With a Bernzomatic torch set to put out a pencil flame, play the torch on the back of the blade until a blue oxide layer forms. Ideally you should have the entire blade blue except for the edge. This is easy to screw up. If you don't do a good job of keeping the blade edge cool with the damp rag and the blue oxide forms on the cutting edge then there will be a soft spot which will not stay sharp. Practice your heat treating and tempering techniques on scraps until you are confident. Buena suerte. Japanese swords are hardened and differentially tempered in one process. The un-tempered blade is coated with clay except for the cutting edge. The sword is then heated red hot and plunged into water. The clay layer slows down the cooling rate on the body of the sword and prevents it from becoming fully hard. The cutting edge, exposed directly to the water, cools very quickly and becomes very hard. I think this would take a lot of skill.
I attach the blade to the handle with 30 minute epoxy. Knives which were made using these techniques can be viewed in the PrimitiveWays Trading Post. Tool Set All of the operations in knife making can be done with hand tools but I am the impatient type. The power tools I use are a Bosch power jigsaw and a 1950 vintage Shopsmith which I inherited from my Dad. I use the jigsaw for cutting out the blade from annealed 1095 stock and cutting out the hardwood for the handle. The Shopsmith is set up as a horizontal drill press for drilling the hole in the handle. This insures that the hole is parallel to the sides of the handle. If you have either a good eye or low standards you can use a vice and a hand-held drill. I also use the Shopsmith's disk sander attachment for shaping the blades and handles. Beveling the edge can either be done with a set of files or with a grinder. 'Real' knife makers use a specially constructed dual belt sander for this job. A special hand tool is used for making the slot in the handle which receives the tang of the blade. I think the traditional name for this tool is a 'float'. The float consists of a short section of saw blade mounted in a wooden handle. The thickness of the saw blade is selected to form a slot the same thickness as the knife tang. The tip of the float is ground narrow so it fits in the hole. The float is mounted so it cuts on the pull stroke. One can also make the float from the same material the blade is made from. The Knife's Karin Dreijer Andersson has lifted the shroud of secrecy surrounding her previously mentioned solo project to reveal a debut album due next year and a lead-off single due much sooner. Get acquainted with Fever Ray by way of inaugural single "If I Had a Heart". You may recall we discussed the instrumental version of this track last time, and it's still available for streaming at the Fever Ray MySpace. Well the "If I Had a Heart" single proper descends on digital retailers December 16 in the U. S. (via Mute) and in Australia/New Zealand (via etcetc), and the day before in the Scandinavia (via Rabid) and the UK/rest of Europe (via Cooperative Music). So many labels! Meanwhile, a video for "If I Had a Heart", helmed by Knife/Jos Gonzlez director of note Andreas Nilsson, should surface soon. Karin's still keeping mum about the title and tracklist for her debut album as Fever Ray, but that set does have a release date. Or rather, several. March 24 in the U. Knife's Edge is a very intimidating rapid. Scout this from river right. The line starts off on river right and makes a left hand move down into the drop. This is followed by a quick right turn along the left wall. It is common to start that second turn too late and flip up on the wall. If you head into the first turn diagonally you will be setup much better for the second turn. There is another move for the faint at heart which has the boater staying along the right ledge and boofing into the pool below. It should be noted that the boof move often ends up with the boater sliding off the ledge sideways. If all of this sounds too much for you, you can sneak the whole rapid in the hidden left hand channel which reconnects at the bottom of the rapid. This channel is not visible from these photos. It is also possible, though tiring, to climb up the right hand bank, over the top of the hill, and back down again if you wish to portage the whole thing. Be safe!

I would never have read this book had I not been assigned a project dealing with Chief Dull Knife's death march from Indian Territory. I picked it up and got plenty of information about that historical event. Reading on, I discovered a great deal more. In addition to tracing four generations of Dull Knifes, this book is one of the most comprehensive and attractive histories of the Lakota people ever. It covers almost everything -from the battle of the Little Big Horn to the upsurge of Indian pride following the siege of Wounded Knee. Though I had read bits and pieces about them before, I was able to form a more integrated picture of the Sioux after reading this book. Often suppressed and today among the poorest groups in America, the Lakotas have held onto and passed down the beauty and resilience of their culture- like the Dull Knife who wore a medicine bundle into Vietnam and Sioux women favoring herbs and blossoms over shampoo. This spirit even shows in the narrative's fresh, confident feel. The book also offers a glimpse at the personality of Dewey Beard, the last survivor of the Battle of the Little Bighorn, who died in 1959 and was a friend of the Dull Knife family.
From the perspective of two generations of Dull Knifes (Guy Sr. and Jr.) the reader is given a 5-generation perspective on just about every important challenge faced by the Lakota/Oglala Sioux and Northern Cheyenne. There is more impact in reading this story than from reading a history book because these are real people telling their real stories which keeps within the Indian tradition of oral history. Most important, is the theme of resistance/persistence which runs throughout this history into the present day, emphasized by the obvious - 5 generations of Dull Knifes and still going. Highly recommended.
Heartbreaking, but excellent reading I found this book among a box of old books that were left behind in a basement. Because of my Cherokee heritage, I was compelled to read The Dull Knifes of Pine Ridge.
A ROAD train believed to be carrying thousands of litres of fuel jack-knifed during peak hour traffic in Darwin. A startled construction worker radioed in the accident from his mini excavator, less than 100m from the accident site. "I just heard the bang and I looked up," he said. "The driver was fine - he was out walking around."The incident occurred around 8am on Berrimah Rd near the Tiger Brennan Drive intersection. The prime mover and first trailer appeared undamaged while the road train's second and third trailers had jack-knifed and veered off the road. According to witnesses at the scene, the road train's first and third trailers were full to their 38,000 litre capacity. A spokesperson from North Fuels, the trucking company involved in the incident, confirmed no fuel had leaked and the situation was under control.

Regular Knife visual collaborator Andreas Nilsson offers an eerie video for "If I Had A Heart," the dark, pulsing, ambient first single from Karin Dreijer's new project, Fever Ray. It's pretty great -- a couple of kids carry a torch and take a boat down the River Styx toward a spooky mansion housing a victim of foul play in a red dress and Dreijer in her skeletal face paint -- but nothing will ever top the quietly anthemic "Pass This On" clip. Then again, this track is more Svarte Greiner than "Heartbeats," so the bleakness is more than apropos.

New Delhi, Feb 2 (IANS) An eight-year-old boy knifed his six-year-old playmate to death - all because of a tiff over a ball. The boy has been sent to a juvenile home, the police said here Monday. The two boys were neighbours in Tughlaqabad area of southeast Delhi. On Sunday evening, the older boy allegedly attacked his friend below the ear and on the neck with a kitchen knife after a quarrel over a plastic ball, the police said. The victim was rushed to the All India Institute of Medical Sciences (AIIMS), where doctors pronounced him dead. According to the police, the boys are students of a state-run school and their fathers worked as labourers. The boys were playing in the victims house and apparently had some argument over a plastic ball. The younger boy after a while rushed to his mother in the next room and said his friend had attacked him with a knife, said a police official.

And just who is contributing to the "Music for Alien Civilisations" project? Naturally, the Knife is involved. Olof Dreijer has recorded a track called "Al Jazeera", which, as Lidbo describes, presents "the very mechanics from the inside of his computer-- the sounds from the circuits and hard drives." Continues Lidbo, "He wants to send a postcard from Earth with environmental sounds that are unique to our planet. And the way Olof sees the world, it's controlled by computers. Transactions of money and information are flooding the internet, but not many people have access to all this information.most people remain ignorant and poor. So that was his idea behind the track." In our vast knowledge base does anyone have any suggestions for making long edge glass knives, i. e. ~ 25mm or so as used for histology or rotary microtomes, with an LKB knife maker or glass breaking pliers? Hi Richard, I used made this type of Ralf Knife around 20 years ago. 1. Start off with a 3 X 1 inch slide and diamond score using a small set square at the desired position. 2. Place a wood toothpick on the opposite side of your score line offset from the line by say 2mm, this distance is critical and may need to be made larger or smaller depending on the profile you achieve. Take care and wear leather gloves and protective goggles, carefully press down on the slide and you should have your Ralf Knife. 3. To use the knife on a microtome, I placed a standard steel knife in the holder with a piece of sheet metal under the steel knife to act as a ledge to support the Ralf Knife. Make your Ralf Knife a few mm. longer than the distance from the edge of the knife to the ledge at the base of the knife. 4. To fix the Ralf Knife onto the front face of the knife, paraffin wax was used by slightly heating both knife and Ralf Knife, and then waiting to both cooled down. This may sound kind of conceited, but its just the truth. I am a mechanical genius. I dont exactly know why, but I can fix almost anything. machines just speak to me. To this end, I have been carrying one or another Swiss Army Knife for about the past 40 years. Often, when crossing a parking lot or driving down a road, I find a poor stranded motorist standing and peering into their open hood with a look of dismay and disgust. I love to step up, ask Do you mind? take out my Swiss Army knife and see if I can get the thing running. Occams razor says its usually some silly little thing, and often as not, I can have the hood closed, the engine running and my hands filthy in just a couple of minutes. I then fold up my knife stick it back in my pocket and just walk away with a smile and a wave. Those are some of the happiest moments of my life. When I was young and vain, I was a Tinker (gotta have the Phillips) guy, just the basics. But it didnt take long before I grew to love those wonderful tiny little scissors (Ive made cuts 10 yards long in fiberglass cloth) and so became a Super Tinker guy. Then I discovered the awesomely beautiful and versatile Space Shuttle and learned the amazing value of a couple of saws and files when it comes to real high tech pocket fabrication. A series of about 6 Space Shuttles were my constant companion for a couple of decades. When they got scarce, I carried a couple of Apollo Soyuz commemoratives for a while and got to love the pliers. Sadly, both of those are now lost somewhere in the entropy well. I did a couple of the similar Fieldmasters when the Shuttles finally dried up completely (I jealously guard one nice Space Shuttle for old time sakes) before discovering the truly incomparable Cybertools. Screw driving is one of the most common demands I make on my SAKs, and the Cybertool, of all the multitools I have ever seen, has by far the best screw driving ergonomics (Bravo!). Im on my fourth Sapphire Cybertool, upgraded from the 34 to the 41 for the last couple. Its a big, heavy pocket-tearing piece, but I dont leave home without it. I have a back up Super Tinker in my briefcase, my Shuttle at home in its place of honor, a camper in the glove box of my car, and a Tinker, covered with grime thats lost one of its side plates and the tip of the big blade, in my mechanics chest. Ive probably had and lost or destroyed or dropped overboard, or donated to friend in need, well over 30 Swiss Army Knives in my life. Ive used them to fix hundreds of cars, dozens of bikes, houses, boats and even an airplane or two. Ive fixed gourmet meals, spread peanut butter and cut firewood. I consider it my moral obligation to always have an Swiss Army Knife in my possession. With their help Ive escaped from stuck elevators, fixed broken outboard motors miles off shore, and brought home more cars than I can count. I just know when the Big One hits, my life, and maybe those of dozens of other folk, may hinge on whether or not I have a Swiss Army Knife with me. I can hardly imagine my life without one. Whoever designed these holy objects, you have my eternal gratitude. Accept no substitutes!
I have always enjoyed collecting knives and the last couple of years started picking up on Swiss army knives. They have been my most favorite so far because they are so versatile. The Swiss Army knives I own are a Swisstool spirit, camper, super tinker, pioneer settler, recruit, sentry, pocket pal, and a classic. I mostly carry the spirit and the super tinker and I keep the classic on my key chain. I am a repairman at a cement plant in Inkom, Idaho. Since I use tools everyday there are many times these guys come in handy. There are a lot of places that's hard to carry a lot of tools, for example two weeks a go working on top of a 90 foot cement silo. I climb all the way to the top and need a screwdriver, which I forgot to grab out of my tool box. No problem with a Swiss army knife in my pocket. It saved a lot of time and hiking. There are many other instance like this, too many to mention. I like how well they hold an edge. They cut some stuff better than a sharp utility knife. I am also involved with a boy scout troop and work on a farm, so I have plenty of chances to use my Swiss army knife. I don't think I go anywhere with out one and if I do that's when I end up needing it the most. I hope to keep collecting them as money permits. Like so many other stories, when I was a teenager, I received my first Swiss Army knife, the Spartan. I put it in my pocket and one has been there ever since. One comes with me every day. While the Spartan has been retired, other models have taken its place. When I started working, I found that the Executive was much easier to carry to work. Plus, I could it clean my nails, peel an orange, open a letter, or cut papers. While it was good for the office, I would need something more substantial to take hiking and camping. At that point I found that the Climber or the Altimeter knives was needed. My collection of knives has grown over the years as Victorinox has expanded its offering and added features. It appears that I have a knife to cover any situation. Even though I am now retired, I still use one every day to handle all the common problems that arise. I bought my first Swiss Army Knife at 1999 in China. It was a Climber, a special Beijing edition version, features with a picture of Beijing Drama. I am a girl. Most people might think that a girl does not need a Swiss Army knife at all. But I like it very much and enjoy it. It is beautiful. The more important thing to me is it is so useful. I used my Swiss Army knife everywhere. cutting a pizza for a lunch with blade, chipping fruits for salad with blade, cutting papers, leathers and even plastic with scissors or blade, fixing my Ikea stuffs with screwdriver, repair my bike with screwdriver. It works perfectly beyond my words. I take it with me everywhere, because I may need it anywhere. It has 13 tools, but actually, in many cases, it can do more by combining those tools. So after a few months with my climber, I bought more Swiss Army Knives (climber, fisherman, hunter, etc.) as birthday gifts for my friends. I believe it will absolutely be the greatest gift. Now I am a graduate student in US, majored in computer science. It helps me a lot more. I can use it to do repairing of my work station..) And it is really so solid that it is still as sharp as a new one. Last month, my roomie bought a book shelf, but can not fix it up since he has no screwdriver or something like. I lent my Swiss Army Knife to him and finally he made it! That made him a fan of the Swiss Army Knife like me! I always bring it to work with me, just taking it and using it when needed. I am a great admirer of Swiss Army Knives and other equipment. I have been using Swiss Army Knives since I acquired my first knife in the early 1970's. My husband was in the U. S. Navy, stationed in Scotland from us. We first learned about Swiss Army Knives when the Navy Exchange got some in for sale. The first knife we purchased was the Camper because it fit our needs for travel and camping. It proved to be so handy, that it wasn't long before we purchased Camper knives for our sons and graduated to the Swiss Champ for ourselves. In all, we own a total of seven Swiss Army Knives. We did have eight, but a brand new black handled Swiss Champ mysteriously disappeared three years ago. What do I use my knives for? Just about everything. I am a 67 year old female and I carry a Swiss Champ in my purse wherever I go. I have used it numerous times to remove splinters (tweezers), examine small print or other hard to see items (magnifying glass), cut things like loose threads on clothing (scissors), open cans (can opener) and bottles (bottle opener), loosen or tighten screws (screwdrivers), fix eyeglasses (mini-screwdriver), cut branches off of small trees (saw blade), punch holes through leather (awl), grip and loosen small items (pliers), and so many other things that I find too numerous to mention. I also carry one of the small swiss Army knife Classic's on my key-ring as a quick-fix for things like ragged, broken fingernails and small cutting tasks. I have the Victorianox chef's knife. It costs about 25 dollars and is a great knife. I've used more expensive knives that I have liked less. Actually, I haven't met a Victorianox knife that I haven't liked. I own about three and they all work well and cost considerably less than other professional knives.
I have Wusthoff, Global, and Shun, knives. I more recently got the Asian ones. I got the Wusthoff in the 80s (they obviously last, thought one broke from my pounding too many garlic cloves and I lost two in moving, hopefully someone in Pittsburgh is doing some great cooking now - I love my Wusthoff cleaver but rarely use my 6' 'sandwich knife'). I'd say that I like the Asain knives because they seem lighter and more 'alive' - perhaps this is a deliberate marketing strategy for people like me. I have no complaints about the 5 Global, I use it for most everything now, I had a brief problem with the 8 Shun rusting on a 'stainless steel' rack in my sink but I learned from my mistake. The Shun is very sharp and attractive, I only use it for special occasions. I'd like to get some of those neat Japanese vegetable knives, I wouldn't buy a 'set' from any manufacturer at this point.

I would use my small Wustoff to crush garlic, gentle smash with the garlic under the blade. One day the blade broke off about 3 inches away from the handle during some not too extreme chore (prying apart frozen chicken I think). I was quite surprised but after thinking I thought it must be a repetited stress related fracture - after many years of mostly gentle garlic crushing the steel had weakened. My solution is to now use my newly made 3 inch Wustoff for all my garlic crushing, as well as all manner of utility-knife tasks. Thanks for asking.
When I bought the Global 5 as a replacement the lady in the store mentioned this to me about the Wustoff, I looked at their website and either decided that it didn't apply or I just decided to keep my old-shorter knife for sentimental reasons.
Jfood has a 10 forschner from 1978 that is still a great knife. last time jfood went shopping for a 7-8 decided to buy whatever felt the best, no price barriers. Jfood bought a 8 forschner. Price is $30-50. Great knife, great price. could not justify triple digits for a knife when the Forschner has been good to jfood.
Why does jfood talk in third person about jfood?You'll see a lot of recs for the Forschners, both here and elsewhere. I finally got one (a 10 stamped chef's knife w/ wood handle) to see how I liked a 10 blade, and I think it's a great knife for the price. It doesn't have the heft of some other knives, but it works great, and the factory edge is pretty sharp. I find myself reaching for it recently, even though I have a bunch of nicer and more expensive knives. Also, the Mundial forged stuff is a great value.. you can get a forged 8 chef knife for ~ $20-25.
Second the Mundial rec. My Mundial wood-handled forged 8 chef's knife from college is still going strong. A mighty blade for ~$30 (and it's a '2100', which Amazon seems to still sell for the same $30 or so last I checked). I was under the impression that Mundial was started by some Henckels employees who realized that steel (and steelworking) was a lot cheaper in Brazil for the same quality of product. may be apocryphal, but I have to say, our Henckels Pro S wedding-present cleaver has an uncanny resemblance in heft and steel to the Mundial chef's knife that I got in college. F. Dick and Forschner are particularly well entrenched in all of the old-school butcher shops I've ever patronized. My father picked up a scimitar-style Forschner from Canali's Meats in DC and loves it. (I hated to break the news that the Market was gutted by fire recently, but they'll be back. just some more battle scars for that magnificent building)So anyways, forged or not, wood or plastic, you can get a bomber chef's knife that will hold up to many, many sharpenings for not a lot of money. You just have to look outside of the usual high-ticket Wusthof and Henckels offerings. (Kershaw used to make good ones, don't know whether they still do since Shun gave them a license to print money)
Flashy? Style? You're not doing a photo shoot. Just because something is more expensive doesn't mean that it's necessarily nicer. I got over kitchen tool envy loooong ago. There's almost a certain counter-chic to having the inexpensive knives that are used in restaurant kitchens and butcher shops. How many people spend $200 on a knife and botch a simple dice, can't do a decent julienne to save their lives?Your hands, skills and the care you give your knives are the ultimate tools. Money is never a substitute for technique.
I have a 10 Forschner chef's knife and a Dexter-Russell bread knife. Love 'em both and didn't break the bank.
Flourgirl, I utilize Forschner knives in my professional knife kit, except for a few dexter Russell. I prefer the D-R bread and slicing knives over Forschner, but that is a very personal decision. There are too many people who equate forged(expensive) with quality. Forschner is standard in professional kitchens, and there is a lessons to be learned. My daughter gave me a Kitchen Aid Santuko for X-mas, and I am amazed by this knife. She paid approx $25.00 and it performs as well as many knives costing 2-3 times as much. Its very sharp, takes a steeling easily and the silicone grip handle makes it very comfortable in a wet environment. I liked it so much I bought her a 3 piece set for her college apartment next year. The only downside to this knife is that it is made in China. IMVHO, there are too many people who post here who feel that all their cooking problems can be solved with the purchased another piece of equipment. Technique and experience are far more than important that top of the line equipment, and the sign of a real professional are those who can prepare a great meal with less than optimal ingredients and tools. A lady who I apprenticed under beat it into me psyche that a real craftsman never blames their tools for a less than optimal performance.
Cook's Illustrated always seems to love the Forschner/Victorinox knives, but where can you buy them (retail, not online)? I've looked at BBB and a couple of other stores but no luck. I want to see and hold a knife before I buy it. I would say to knife shoppers to stay away from the sabatier knife deals on Amazon. I have a 30 yr old Sabatier that I love so I fell for the closeout, regular retail $300, sale today 29.95 Imported Sabatier... knives they featured on their home page. What a waste of money. They don't sharpen at all, and the knife block they came in looks like it was never sanded down. Sure, the knives are imported.from CHINA, not France.
Coney w/ everything. Forschner knives are standard in the food service industry and I have always found the best prices are at a restaurant supply shop. If a particular shop doesn't have them I am sure that they can direct you to a store that does. I love the Forschner paring knives, and they are a absolute bargain at $6.00 each. I've been pretty happy with some brand-name knives i've bought at marshall-type stores, but you could also try going to a local asian grocery store checking out the knives there. i bought a cleaver years ago (i think it was like $10) and i love it. they have a range though - i don't like the really large but thin kind that seems to be one piece, mine is quite solid and heavy, goes through meat so easily. they also have the asian uni-knife (rectangular, for all purpose things). maybe you could check out the details on some of the pricey brands (i. e. what makes them so great?) and then look for similar things elsewhere.
I bought the Victorinox/Forschner 8 Chef's knife, model 40520, on Amazon for about $30. delivered. I'm very happy with it. Bought my son a much pricier Wusthof but I think I like mine at least as well. That surprised me.
Haha.my girlfriend bought me an entire knife set (16 pcs)..with timer attached to the block set for no more then $10 at pickering flea market, and it works just fine, a little of sharping of course..but much better then what I had before..i know..the girl wants to safe her money..well..i can just say..that was a smart buy.

I have a variety of knives that I have accumulated over the years, some from way back in my restaurant days. I got a carbon steel Chicago cutlery chef's knife cut back from stock to give the balance I need for the Japanese cutting I learned (sliding the knife rather than chopping) and they gave it the single bevel edge. I also have a stiff fillet knife (Dexter) and vegetable knife of unknown origin both of which I picked up at -- yard sales! I have an old takobiki for slicing sushi that I got decades ago as part of a sushi making set. Cheap but very effective if I keep it sharp. My latest addition is a santoku knife I recieved as a present from my brother when he heard I was researching santokus. It's from Lamson in western MA. (They claim to have originated the santoku style! Pretty big claim!) He lives there and bought it at their factory store. It's German stainless. (I bring my knives to a restaurant store for sharpening -- while I wait. They say that a lot of German steel is produced here in St. Louis and shipped to Germany! Another claim I have not researched.) In any case, the knife is a little heavy but keeps its edge well. I heartily recommend that unless you can keep your knives bone dry and out of the humidity that whatever you get get rustless. The Chicago knife I have is not and I have to pamper it all the time, especially if I cut anything acidic. I often coat it with a little vegetable oil, and rub most of it off and in.
I agree about judging by feel. no knife is going to suit every hand. And keep an eye open at flea markets. You can find very good old high carbon knives that look awful til you get them home and cleaned up and properly sharpened for a couple of dollars.
The best knife to buy is the knife that feels good to you and you will acctually use. If you buy a $100 knife and never use it becuase it feels wrong, it's worthless to you. That being said I have two types of knives in my kitchen that both have good bang for the buck. If you like a nice heaby feel Calphalon makes a nice line that sells under the Simply Calphalon name. They are forged, have a full tang in the handle, are very stout, and cost about $20-35 per blade. So you can buy them open stock one at a time to go easy on the pocket book. My second choice are the OXO Pro knives. They are precision cast and ground, so they are not as thick and stout as the forged knives, but they are generally much nicer than stamped blades. The thing I absolutely love about these knives are the grip. They have that great OXO rubber coating on the grips so you can work with them for a long time and your hands don't get as tired. Or if your hands are wet or oily you still feel like you have a good grip - I am missing my right hand pinky so having a good grip is vital for me. The OXO's run about $15-30 per blade and I think you can pick up a block set for $80-$100.Your best bet is to go into someplace that has a lot of open stock and tell them you want to see how a bunch of differant knives feel, then shop around for a good price!
Could not agree more on the Calphalons. Have a short chef's knife and am really impressed. Easy to sharpen as well. Impressive for the price.
I have a lot of Sabatier carbon steel knives, and a couple of Japanese laminates, but the knife I use most, and which feels best in my hand, is a simple Lee Valley 7 French peasant's knife, carbon steel, from Taiwan. It costs about $22.
The Tojiro DP 240mm gyuto (japanesechefknife. com) for $50 USD is awesome. I have a 8 MAC Professional ($75 CDN from the asian supply store) that I swear by. A surprising heavy hitter in my kitchen is a un-named thin vegetable cleaver from (apparently) japan I got for $20 at the asian place. Carbon steel wrapped in stainless. Holds an edge like no tomorrow and gets an awful lot of use. A chef's knife is nice but if I'm doing bulk chopping I like the cleaver. The scooping action is useful and unless I'm doing really really delicate work, the end product is as good as my chefs knife. I suggest this guy. as a starting point for cleavers (well more of an end point) really.
One other thing.. for the love of god, handle the knife if you can. I can't stand the forschner (SP?) handles. Something about them just doesn't feel good in my hand. I have big hands too and I found the Global handles lacking. The MAC fits my hand just right ($75 cdn hit the price right too). If the handle sucks, for you, no matter how well the rest of the knife is it won't get used. Invest in a good sharpener too, and don't store you're shiny new toy in the cutlery drawer.

The female driver of the car and one of the other drivers also female were taken to hospital where they received medical attention for their injuries. Garda say that neither of the women are residents of Co. Wicklow. They are not described as lifethreatening and both are reported to be making a swift recovery. The truck driver and remaining driver escaped without injury. Full emergency service crews attended the scene which remained closed until 6.30p. m. on Saturday evening while technical examinations were completed. Motorists were held up as the section from Ballymoyle Cross to Arklow North was closed and they were diverted through Redcross.

Four Pretoria residents were seriously injured when a trailer they were towing jack-knifed, catapulting their car across the Ben Schoeman Highway. The accident, which saw traffic backing up from the Jean Avenue off-ramp to the Eeufees off-ramp on Thursday, saw motorists - including a furniture removal truck driver - desperately swerving across the highway to avoid the rolling vehicle. The accident, which occurred in the southbound lanes during rush hour traffic, was believed to have been caused by a wheel that broke off the trailer. Gideon Steyn and his son, Francois, along with their domestic worker and two employees, were towing their hired trailer to Olievenhoutbosch to deliver paving bricks to their domestic worker's home.
Francois managed to pull himself from the wreckage before helping his father and worker, Martha Mahlangu, to safety. The family's two other workers, James Magagula and Martin Moeketsi, who sustained serious spinal injuries, were thrown from the vehicle as it rolled across the highway. As emergency workers on the scene worked frantically to stabilise the injured, carefully lifting them on to backboards and stretchers before taking them to hospital where they were all reported to be in a serious condition, police cordoned off a large section of the highway. Francois said they had just driven past the Jean Avenue off-ramp when they felt the trailer swaying. "As I looked behind me, I could see the trailer swerving across the road. "The next minute we were catapulting through the air and rolling across the road. "Everything happened so quickly. "It was extremely scary. I felt so helpless. "There was nothing I could do except to try to hold on," he said. ABSTRACT. OUR FAR-FLUNG CORRESPONDENTS about master bladesmith Bob Kramer. Bob Kramer is one of a hundred and twenty-two people in the world, and the only former chef, to have been certified in the U. S. as a Master Bladesmith. To earn that title, which is conferred by the American Bladesmith Society (A. B.S.), Kramer underwent five years of study, culminating in the manufacture, through hand-forging, of six knives, including a fifteen-inch bowie knife. Like a mad alchemist, Kramer, aged fifty, cannot stop tinkering with steel recipes. Last year, Cooks Illustrated ran a sidebar which stated that the Kramer chefs knife outperformed every knife weve ever rated. A few months later, the kitchen-supply chain Sur La Table asked Kramer to design a commercial line of knives, which the store introduced this fall. The writer toured Kramers shop. Kramer was absorbed in an attempt to replicate the legendary achievements of Frank J. Richtig, who, in 1936, forged a butcher knife that could cut cold steel and paper. Describes the forging process. On the retail market, Western knives tend to be the softest, with Rockwell ratings in the middle to upper fifties. The Rockwell of a traditional Japanese knife, by contrast, runs in the middle sixties. Kramer first became fascinated by sharpening in the mid-nineteen-eighties, when he was a prep cook. He took a forging course with A. B.S. and obtained his Master Bladesmith certification, a coronation the A. Angry islanders smashed the paramilitarys office in Delft and set fire to office furniture after armed members of the group knifed a local shopkeeper during an altercation Saturday night. The islanders stoned a boat carrying the paramilitarys cadres that had tried to go ashore Sunday morning. The condition of Mr. Kandapillai Loganathan, 50, the person who was attacked by the paramilitary group, EPDP, is serious. Sources from Delft told TamilNet that EPDP cadres had chased an inebriated local following a heated argument with him at their office last night. The man had run into the shop of Loganathan to escape his pursuers. The armed EPDP cadres had, however, turned their wrath on the shopkeeper with whom they had had a dispute in the past, according to the sources. Angry islanders had gathered in front of the EPDP office in Delft Saturday night as word spread that Loganathan was attacked and seriously wounded by the paramilitarys cadres, demanding justice. The crowd had later turned unruly when the EPDP had attempted to leave the office and had smashed the building and its parapet. Sections of the crowd had also set fire to everything inside the office. Thereafter the islanders had kept vigil through the night to prevent the EPDP from retaliating on them. The Sri Lanka Monitoring Mission in Jaffna went to the island Sunday to investigate the matter, mission sources said.

Details are scant at the moment, but Karin Dreijer Andersson-- onetime Honey Is Cool frontwoman and current female half of Swedish sibling synth-mongers the Knife-- has emerged with a nifty-looking solo project. Fever Ray, as she's calling herself, plans to have an album out in early 2009 on Rabid Records [via PSL]-- which probably goes some to explain why the Knife haven't been up to much of anything in a while. Thus far Dreijer's only sharing one tease of a track, "If I Had a Heart (Instrumental Edit)", which hints at something slightly more organic than the frigid, nocturnal sonic landscapes occupied by Dreijer's other current project. Hi everyone,im looking to buy a new bushcraft knife and i really like the "woodlore " knife design by alan wood and obviously they are not available anymore, i dont care about having the ray mears logo but i do want the same design (birds eye maple handle, o1 carbon steel etc) and would REALLY appreciate any help you can give me finding the knife, i have tried to contact alan wood directly to have one made with no joy, so any good knife maker will do i currently use a martiinni finland "condor" which is a great knife with a fantastic blade but really want a knife for life and it isnt carbon steel, its a special alloy only martiinni make allegidly, but still really strong and durable, sharpens to a great edge and keeps it . i also use a gransfors small forest axe which i think is fantastic . any help is appreciated guys thanksWill McGregor

I use EKA Nordic knife model W11. Its made of Swedish 12C27 steel. The shape, size and thickness of the blade is very similar to woodlore knife. Excellent bushcraft tool.

Laurel Leaf points and knifes have their origins in the Paleolithic tool making culture of Western Europe called the Solutrean. It is named after a kill site in central France called Solutre. The Solutrean culture existed for a comparatively short period between 20,000 - 17,000 years ago, and is divided into three temporal periods. The three periods are Early Solutrean, Middle Solutrean and Late Solutrean. The Laurel Leaf style is considered to have it's origins in the beginning of the Middle period. However, some blades and points have been found dating as far back as 20,000 years ago, placing them in the Early period. Besides a few early artifacts, the majority of blades and points were manufactured during the Middle period. Laurel Leaf points and blades are highly regarded because of the great detail and fine workmanship that was necessary. In fact, a good portion of them were actually produced as jewelry or luxury items. Laurel Leaf patterns were also a sign of an advance in tool making. It marked the transition from unifacial points (points that were only flaked only one side) to bifacial or two-sided flaking. It also marked the first use of the edge-to-edge percussion flaking technique that is called outr pass. This type of percussion flaking required tremendous skill and attention to detail in order to create such delicate implements. The Laurel Leaf and the Willow Leaf points and blades distinguish the Solutrean culture as a great tool making culture, developing techniques that would be used for thousands of years to come. The Clovis tool industry of the Americas about five thousand years later utilized some of the techniques founded in the Solutrean. This relationship between the two has lead to new theories on the relationship of Old World and New World manufacturing techniques. Laurel Leaf points and blades are beautifully designed and crafted items that represent a sometimes over looked culture that contributed greatly to the advancement of tool making. New Delhi, Feb 2 (IANS) An eight-year-old boy knifed his six-year-old playmate to death - all because of a tiff over a ball. The boy has been sent to a juvenile home, the police said here Monday. The two boys were neighbours in Tughlaqabad area of southeast Delhi. On Sunday evening, the older boy allegedly attacked his friend below the ear and on the neck with a kitchen knife after a quarrel over a plastic ball, the police said. The accused boy said he was playing with the younger boy, who allegedly threw the ball downstairs. This made him angry and he first thrashed the younger boy and then pumped the knife in the lower portion of his left ear,” said a police officer. “The victim after a while rushed to his mother in the next room and said his friend had attacked him with a knife, the official added. He was then rushed to the All India Institute of Medical Sciences (AIIMS), where doctors pronounced him dead. Saddam Hussain, 16-year-old cousin of the deceased, said the victim was the only son of his parents. He was a Class 1 student at the Ganga Memorial Public School in the same area. His father Siraj Khan runs a hair saloon near their house. The victims body has been handed over to his family after the post-mortem examination. The accused was presented before a juvenile court, from where he was sent to an observation home for boys. The father of the accused is a labourer in Karnal district of Haryana.
